Knights shouldn't fight Cyclopses until they have a bit higher level and better skills, with some average equipment. You can surely fight, and kill a Cyclops 1-1 with level 17, 50/50 skills and a Firesword. Cyclopes can be used to train by very high skilled players, if they cannot keep a Minotaur alive for a reasonable time. However, be careful since Cyclopes can damage you a lot.

Econ:
A level 8-10(+) paladin with good skills, 30+ distance can solo one of these, it's really easy, find a Cyclops in the open, so you can run away from it and won’t get hit by the close combat attacks. Because Cyclops only have close combat attacks, you can gain lots of exp with only the cost of ammunition. If you wish to train on this monster you should have distance skill 60-70, but be aware, distance weapons break

Mage hunting guide
Items needed (for a decent and safer hunt):1 backpack of UH runes
1 backpack of HMM runes
10 mana fluids
1 backpack of GFB runes
Blank runes (when you need more healing or attack runes)
4 Sudden Death runes (You could take more or less)
Strategy: Mages are able to kill Cyclopses pretty fast at a low level. When you’re a level 13 mage you can surely escape the close combat attacks and kill it by using your wand or rod. Just make sure you have enough food to keep up your mana, for shooting and to use healing spells in bad situations. Do not hesitate using a Great Fireball rune when there are more then 3 Cyclops around. This monster is ideal for you to get experience from.
What to do when surrounded:First of all, don’t panic, cause this will only make the situation more tricky. Use your manashield to avoid getting out of hp, use manafluids and kill the Cyclops with Great Fireballs. If it’s an emergency case you can use a sudden death rune to kill a Cyclops fast.
Safety rules:*ALWAYS have your backpack of UH window opened, you might need an emergency rune if the situation gets bad.
* You must also have your backpack of HMM window opened in order to use them in a more effective way. Do the same with your backpack of mana fluids and great fireball runes.
* It is always good to have the “heal friend” spell in one of the hotkeys with your name on it, in that way if you are not using your magic shield you can heal instantly by using only 70 mana. (Druid advice)
* If you are low on mana while fighting you must not hesitate and use a mana fluid or two.
Attacks:
Close Combat: Cyclopses can make up pretty high damage to players who don’t have average equipment. They can smash you up to 120 damage per turn but at level 20+ you should be able to block a Cyclops so you’ll avoid getting lots of damage easily. If you’re a lower level you should definitely keep distance.
